Its history dates back to 1818, when Nicolas François Billecart and Elisabeth Salmon joined forces to launch their Maison de Champagne. A familiar story since Louis Salmon, Elisabeth's brother and passionate about oenology, was involved in making the wines. Its champagne is based, above all, on the unique know-how of its men who religiously care for a property of 100 hectares and extract its grapes from a total area of ​​300 hectares in 40 crus de Champagne. Most of the grapes used come from Epernay, in the lands of the Montagne de Reims, the Côte des Blancs and the Marne Valley.

Fermented in small oak barrels and aged for six to seven years on the lees in bottle prior to the disgorgement.
The nose is spicy, pure and fresh, delivering small red berry, white fruit and floral as well as nicely fresh oak flavors to the ripe and well-concentrated nose. Full-bodied and rich, this is a very intense and well-structured, pure and vinous Champagne clearly driven by the two Pinot varieties in terms of fruit and body. The Chardonnay, however, contributes freshness, finesse and a long, citrus-fresh and tightly structured finish.
