A concept for wines that happen. For unique conditions in unique years. by constant restlessness, a challenge to all norms. They could be called “collection wines”, but they are mostly wines to be found. And above all, discovered.
They recover a technique that has always been used at Casa da Passarela in the preparation of white wines, although it is a method commonly used for red wines. Tanning consists of skin contact during the fermentation process, and they opted for this to take place in a cement tank and with stems. This technique produces wines of enormous character, personality and differentiation. It had a one-year stage in 600lts barrels.
A perfect white wine to serve with Serra da Estrela cheese, strong meat or fish dishes.
