For unique conditions in unique years. by constant concern, a challenge to all standards. They could be called "collection wines", but they are mostly wines to be found. And above all, discovered.
We have recovered a technique that has always been used in Casa da Passarela in the elaboration of white wines, although it is a method usually used for red wines.
Tanning consists of the skin contact during the fermentation process, and we chose to place it in a cement tank with trick. This technique produces wines of enormous character, personality and differentiation.
It had a stage of one year in barrels of 600lts.
Aroma of white fruit with mineral notes.
Complex balsamic notes with some citrus and honey.
End of mouth long and persistent.
Perfect to serve with Serra da Estrela cheese, strong meat or fish dishes.
